How do app developers keep compatibility with old versions of iOS?

I don't understand how app developers retain compatibly with versions of iOS as early as 2.0. There are still apps on the app store than require 2.0. Open only allows a minimum deployment target of 4.3 now. How do app developers do this?

When you are doing a project in the XCode, in IOS application target, you find: deployment target, there you can select the version of IOS that you are interested in. The minimum is 4.3.
