There is no way to tell for certain. Apple doesn't say too much about what goes on inside. The Apple jobs website currently lists 270 openings for iOS engineers. There is more to life than just "developing", after all. If we assume an typical 15% churn, then there are probably something like 1800 iOS engineers working at Apple. The biggest project I ever worked on was a government project with 2.4 million lines of code and a total of 600 engineers. I think my guess is pretty accurate.
